Dates Energy Balls

12 Energy Balls
Ingredients:
- 1 Cup Pitted Dates
- 1 Cup Nuts (such as Almonds, Walnuts or Cashews)
- 1/4 Cup Nut Butter (such as Almond Butter or Peanut Butter)
- 1/4 Cup Shredded Coconut (optional)
- 1/4 Cup Cocoa Powder (optional)
- 1 Teaspoon Vanilla Extract (optional)
Instructions:
- Place the dates in a bowl and cover them with warm water. Let them soak for about 10 minutes to soften.
- In a food processor, add the nuts and pulse until they are finely chopped. You can also chop them by hand if you prefer a chunkier texture.
- Drain the dates and add them to the food processor along with the nut butter, shredded coconut (if using), cocoa powder (if using), and vanilla extract (if using).
- Process the mixture until everything is well combined and forms sticky dough. If the mixture is too dry, you can add a little bit of water or more nut butter.
- Scoop about a tablespoon of the mixture and roll it into a ball using your hands. Repeat with the remaining dough.
- If desired, you can roll the energy balls in additional shredded coconut or cocoa powder for an extra coating.
- Place the energy balls in an airtight container and refrigerate for at least 30 minutes to firm up.
