Dates Energy Balls

 

Ingredients:

 

  1. 1 Cup Pitted Dates
  2. 1 Cup Nuts (such as Almonds, Walnuts or Cashews)
  3. 1/4 Cup Nut Butter (such as Almond Butter or Peanut Butter)
  4. 1/4 Cup Shredded Coconut (optional)
  5. 1/4 Cup Cocoa Powder (optional)
  6. 1 Teaspoon Vanilla Extract (optional)

Instructions:

 

  1. Place the dates in a bowl and cover them with warm water. Let them soak for about 10 minutes to soften.
  2. In a food processor, add the nuts and pulse until they are finely chopped. You can also chop them by hand if you prefer a chunkier texture.
  3. Drain the dates and add them to the food processor along with the nut butter, shredded coconut (if using), cocoa powder (if using), and vanilla extract (if using).
  4. Process the mixture until everything is well combined and forms sticky dough. If the mixture is too dry, you can add a little bit of water or more nut butter.
  5. Scoop about a tablespoon of the mixture and roll it into a ball using your hands. Repeat with the remaining dough.
  6. If desired, you can roll the energy balls in additional shredded coconut or cocoa powder for an extra coating.
  7. Place the energy balls in an airtight container and refrigerate for at least 30 minutes to firm up.
